Recipe: Matcha maple granola

Ingredients:

  • 2 cups of oatmeal
  • 1 cup nuts (almonds, walnuts, or pecans), chopped
  • 1/2 cup seeds (pumpkin or sunflower seeds)
  • 1/4 cup coconut flakes
  • 2 tablespoons matcha powder
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dried fruit (optional, such as cranberries or raisins)

Instructions:

  • Preheat the oven: Preheat the oven to 165°C and line a baking sheet with baking paper.
  • Mix Dry Ingredients: In a large bowl, combine rolled oats, nuts, seeds, coconut flakes, matcha powder, and salt. Mix well.
  • Mix Wet Ingredients: In a separate bowl, mix together maple syrup, melted coconut oil, and vanilla extract.
  • Mix Everything Together: Pour the wet ingredients over the dry ingredients. Mix until everything is evenly coated.
  • Arrange on Baking Sheet: Spread the mixture evenly on the prepared baking sheet.
  • Bake: Bake for 20-25 minutes, stirring once in between, until the granola is golden brown.
  • Cool and Add Fruit: Remove from oven and cool completely. Once cooled, stir in dried fruit, if using.
  • Store: Store in an airtight container at room temperature.
